Wow! This is my new go to lunch or dinner meal. I am calling these “medicinal mushroom tacos,” because Shiitake Mushrooms can bring an array of health benefits to the human body.

Portobellos and Button Mushrooms are far from medicine and actually are nothing like Shiitake Mushrooms. I highly suggest omitting button and portobello and stick with Chanterelle’s, Shiitakes, and Lobster mushrooms. Cordyceps, chaga and reishi are other medicinal mushrooms to add to tonics, soups and desserts. They may cost more but the reason is because they are medicinal.
So these mushrooms are the main aspect of the tacos.
You will need:
Organic grown shiitake mushrooms
Fresh garlic – pressed
Micro green beet tops or I love chopping a head of Frisee for the topping – my all time fav lettuce varietal
Avocado cream or sliced Avocado ( Avo cream is avo, pine nuts, creamed with lemon, salt and garlic)
Shredded heirloom carrot
Bok choy – option to steam this with the mushrooms
1 Packet of Siete Coconut or Almond Flour Tortillas (These are beyond epic and make the taco experience).
Sautee washed, sliced mushrooms in coconut oil with minced red onion, salt, coconut aminos and pressed garlic. Add the bok choy towards the end if you are incorporating that so you don’t over cook it. Best to steam it a bit though to reduce goitrogen levels and make nutrients more available. Its a sweet balance of not over steaming.
Warm the tortillas in the oven so they are soft.
Top the tortillas with sautee mixture, add the raw shredded carrots, sliced radishes, avo or avo cream and frisee or beet tops.
This meal is so flavorful, easy to digest and has so many vital nutrients. The beet tops are great to build blood and carrots and radish are excellent foods for the gut biome.
