- 1 cup Cooked Wild Organic Rice if using White Rice will need 2 cups cooked rice for best consistency.
- 1 cup Colostrum
- 6 Pasture Raised Eggs
- Maple Syrup if desired for topping
- Top with Homemade Probiotic Rich Coconut Yogurt Optional
- 1 tsp Ghee for skillet
Cook 1/2 cup wild rice by adding in 2 cups of water, bring to a boil and let simmer for 40-60 minutes or until soft. Drain water and if using immediately cool it down first so you don't cook the eggs when blending.
I simply run the rice under cold water. Then make sure no water remains. Set aside.
Crack 6 eggs into the high powered vitamix blender.
Take 1 cup of the cooled, cooked rice and add it to your high powered vitamix blender.
Add 1 cup of colostrum powder
Blend on high or 2 minutes or until it is blended well.
Heat a skillet on low to medium and add a tsp of Ghee. Wait until it is fully melted and sizzling.
Add the pancake mixture at about 1/4 cup for each pancake.
They should take a few minutes on each side. Then top with your favorite yogurt or maple syrup.
